menu planning monday!

So, it's Tuesday not Monday....is that okay? I got sidetracked yesterday (and obviously most of today..ha!) but I DID make my meal plan yesterday and I DID shop for it today, so I am in go position! We almost stuck to the meal plan last week. Much better than we had in the past. This week I'm doing things a little different....rather than the regular Sunday through Monday, or Monday through Sunday thing we are going to go with a Tuesday through Monday schedule as I think this will work much better for how I shop and our busy schedule.

This week we are having:
  • Tuesday- Homemade potato soup with salad
  • Wednesday- Pioneer Woman's Roasted Vegetable Minestrone with grilled cheese (never made this so I'll let you know how it turns out!)
  • Thursday-Spaghetti Pie with garlic bread, broccoli and salad
  • Friday-Pizza night! (otherwise known as 'Mom is going out and the boys are bachelors' night!)
  • Saturday-Leftovers/sandwiches
  • Sunday-Smoked Sausage, sauer kraut, mashed potatoes, green beans, cornbread
  • Monday-Brinner-Make ahead muffin melts or homemade pancakes or both!
Wish me luck, we have a busy week so I hope I can stick to it, at least as well as I did last week. How is your meal planning going? Any tips, tricks or recipes to share??

Good for you for sticking to the plan! How did the minestrone come out?

Right now my life is (mostly) empty nesting: our three oldest kids are married; one is still at home but sitting on the edge of the nest and talking about flying to his first apartment; and the youngest one is in training for the National Guard. So what we do is, on my husband's days off, he cooks. On nights when both the guys are at work, I eat leftovers. And on days when my hubby comes home by 6, I cook.

But what we used to do when the kids were still living at home, was to make up a weekly calendar, and ask the kids which night they would be home to cook dinner. They had to choose a night... no skipping out on cooking once a week. And once their choice was made, they were committed to it. They could choose what to cook, but I would by the ingredients (within reason). And if their plans changed, they either had to trade days with a sibling or parent, or they had to cook the meal earlier in the day, or at worst, they had to buy pizza from Dominos and have it delivered.

For the most part, it really worked well. All our kids know how to cook more than macaroni and cheese, or ramen noodles, so I think they will survive reasonably well being able to feed themselves now that they're on their own.

The minestrone turned out delicious!

I remember it being hard to cook for only 2 people when it was just my husband and myself, and even after Eldest came into the picture before he was eating big people food. It's a great idea about having the kids cook, they help me bake now but that's about it. Occasionally help out making pizza. When they get older and able to do more on their own though I think we'll incorporate the 'kids cook' nights as well. Sounds like a dream come true to have dinner cooked for me! (even if it IS just mac 'n cheese!)
