
So in an attempt to get back to this blogging thing that I've been woefully remiss in lately I've taken up the Monday Menu Plan torch and run with it. I do this every week, I know there are other Mom's out there that do this too...maybe we can inspire each other and share our favorite recipes as well!
This week being a holiday week was a little hard to plan for, at least for me. I want to make sure I don't have too many leftovers in my fridge so I can fit all the Easter food on Saturday evening! This week we are having:
Monday-
Spicy Asian Chicken with basmati rice and broccoli/cauliflower blend.
Tuesday-Chicken Nuggets, steak fries and broccoli/cauliflower (this was a kid requested meal, of course)
Wednesday-Dinner out (we don't do this very often anymore but we are seeing Cirque de Soleil that night and have another appointment beforehand so Snappy Tomato buffet it is....it's Kids Eat Free night! ;)
Thursday- 3 Bean Chili, salad, grilled cheese (we use
this recipe but omit the meat)
Friday- Homemade Pizza (one Mexican pizza, one regular ol' cheese pizza) and salad
Saturday-Burrito Skillet nachos (I'll share the recipe, SO delicious!)
Sunday- For Easter we are having families over..our menu will be: Ham, green bean casserole, deviled eggs, potato salad, croissants, assorted veggies with dip, lemon fluff for dessert
Monday-since this is Littlest's birthday I already know what he's going to order....homemade Cincinnati chili 3-ways with "lots of cheese" ;)
And now for that 'Burrito Skillet' recipe. I found this in a downloadable recipe booklet on a menu planning website that for the life of me now I can't recall. However, the recipe originated at
The Morris Tribe so I want to give her full credit for such easy deliciousness! It's really such an incredibly simple recipe, you wouldn't think it could be SO good!
1 pound ground beef or turkey (we usually use turkey..and have even made this vegetarian by just adding an extra can of beans)
1 onion (this is my addition, we just love onion)
1 packet taco seasoning
1 cup salsa
1 cup water
1 can kidney beans (I've used pinto as well)
4 tortillas (we usually skip this part)
1 can corn (I've also used frozen or omitted altogether)
1 cup shredded cheese
Brown ground beef/turkey, add onions and cook until translucent. Add taco seasoning, beans, salsa, corn and water. Bring to a boil, cover and reduce heat, simmer for 10 or so minutes.
At this point the recipe calls for cutting the tortillas into strips, adding them to the mixture and stirring well, topping with shredded cheese and serving. We usually either make burritos, nachos, tacos with the mix or serve it over rice. We add sour cream, jalapenos, extra salsa..just anything you like! It's simple, cooks up quick and is Delicious!!!!!
