Happy Birthday to my baby!


So here it is. The much anticipated day has arrived. When your youngest is about to officially become a kindergartener you can no longer say "Yes, Ewan is my baby" because he's not a baby anymore. I won't bore you all with the long list of weepy, sappy things in my head this morning (I think there may be actual tears in his birthday cake...shhh!) but suffice it to say that this day is bittersweet for me. I am so proud of his independence and quirk and sassy smiles but so sad to see him growing so fast.

We love you Ewan, you made our family whole and we would be lost without you. As much as it pains me, keep growing and getting sassier and quirkier and taller and smarter and all of those other things you are. I'm so proud of you and always will be. Love, Mama.

Not ready...




Much like my friend Katie at the little things I've spent the past day or two preparing....not just for Easter, though that's high on the list, but for a birthday as well. Unlike my friend Katie, I am not prepared at all....in more than one way.

My house is embarrassing from top to bottom at the moment. The sink is full of dishes, the carpet looks like wild animals have been scurrying though all day (and they have...the 2 legged kind anyway), the sheets aren't even on my bed so I couldn't go to sleep if I wanted to.

The deviled eggs and potato salad are at least ready, and many eggs were dyed and decorated, and the Easter Bunny is fast approaching. So there is an upside here.

However looking back at Easter's of the past I am reminded just how big my "baby" really is....my "baby". He's a big boy now. He is starting to read and add numbers and uses bigger words in his sentences than I do. He's outgrown Mickey Mouse Clubhouse and Yo Gabba Gabba and instead knows every Pokemon ever created and wants to "catch'em all". He doesn't need my help with much anymore, because he's big you see...big boys don't need Mom to help them with too much. And he's sassy. Have I mentioned how sassy he is??? He's far sassier than any 5 year old has a right to be. If I'm dealing with this now, what's it going to be like when he's a tween? Teen? 21 year old??!

So even though I may get up in the morning and clean the house to the point of being respectable, and set the food out, and perhaps hide some eggs with the Easter Bunny I don't think I'll ever really be ready for what the next 2 days hold. Because he's all grown up now....and Oh, I'm not sure I'm ready.

Menu planning Monday!


So in an attempt to get back to this blogging thing that I've been woefully remiss in lately I've taken up the Monday Menu Plan torch and run with it. I do this every week, I know there are other Mom's out there that do this too...maybe we can inspire each other and share our favorite recipes as well!

This week being a holiday week was a little hard to plan for, at least for me. I want to make sure I don't have too many leftovers in my fridge so I can fit all the Easter food on Saturday evening! This week we are having:

Monday- Spicy Asian Chicken with basmati rice and broccoli/cauliflower blend.

Tuesday-Chicken Nuggets, steak fries and broccoli/cauliflower (this was a kid requested meal, of course)

Wednesday-Dinner out (we don't do this very often anymore but we are seeing Cirque de Soleil that night and have another appointment beforehand so Snappy Tomato buffet it is....it's Kids Eat Free night! ;)

Thursday- 3 Bean Chili, salad, grilled cheese (we use this recipe but omit the meat)

Friday- Homemade Pizza (one Mexican pizza, one regular ol' cheese pizza) and salad

Saturday-Burrito Skillet nachos (I'll share the recipe, SO delicious!)

Sunday- For Easter we are having families over..our menu will be: Ham, green bean casserole, deviled eggs, potato salad, croissants, assorted veggies with dip, lemon fluff for dessert

Monday-since this is Littlest's birthday I already know what he's going to order....homemade Cincinnati chili 3-ways with "lots of cheese" ;)

And now for that 'Burrito Skillet' recipe. I found this in a downloadable recipe booklet on a menu planning website that for the life of me now I can't recall. However, the recipe originated at The Morris Tribe so I want to give her full credit for such easy deliciousness! It's really such an incredibly simple recipe, you wouldn't think it could be SO good!

1 pound ground beef or turkey (we usually use turkey..and have even made this vegetarian by just adding an extra can of beans)
1 onion (this is my addition, we just love onion)
1 packet taco seasoning
1 cup salsa
1 cup water
1 can kidney beans (I've used pinto as well)
4 tortillas (we usually skip this part)
1 can corn (I've also used frozen or omitted altogether)
1 cup shredded cheese

Brown ground beef/turkey, add onions and cook until translucent. Add taco seasoning, beans, salsa, corn and water. Bring to a boil, cover and reduce heat, simmer for 10 or so minutes.

At this point the recipe calls for cutting the tortillas into strips, adding them to the mixture and stirring well, topping with shredded cheese and serving. We usually either make burritos, nachos, tacos with the mix or serve it over rice. We add sour cream, jalapenos, extra salsa..just anything you like! It's simple, cooks up quick and is Delicious!!!!!

~excited that we are nearing the end of the school year...bring on Summer!

~enjoying a quiet day at home with little housework on my chore list...

~feeling the need to re-prioritize for the coming warm weather months...house cleaning and laundry can wait...catching lightning bugs cannot!

~welcoming the first buds of Spring on the trees in the backyard and the sweet smell of flowers in the air...

~happy to have what we need, and sometimes what we want...

{this moment}...from the vaults

I've been away from this space for quite awhile....unfortunately most of my family fell victim to a rather nasty strain of strep and even mama was down for the count for an entire week. It's been a haul getting us all healthy and back to normal, but we are finally there!!! As a result of 'the sickness' not many photos have been happening here lately....so I give you one from the vaults. We are coming up on a rather big, landmark birthday here...and we are so excited, but also a little melancholy. After all it hasn't been that long since he was just a tiny, wee bundle...
